Our Truffles

We started our truffle adventure in 2017, planting 700 French oak trees on one of the previously overgrazed paddocks on our newly purchased farm. 

We now have a beautiful young oak forest that we know will bring many benefits to the many above- and below-ground species we share this special place with.  

As well as providing a wonderful place to grow our own Black Truffles!

In addition to high rainfall and plenty of frosty days, the rich volcanic soils we have here at the foot of Mt Baw Baw in the Victorian High Country are perfect for growing Black Truffles.

TIPS

Always store truffle in an air tight container (glass is best) in the fridge

Wrap the truffle in paper towel or sit on a bed of rice in the container and change daily

Truffle pairs well with eggs, cheese, butter, pasta, steak

Don’t cook truffles in high heat - rather, add them at the end of cooking

Use within the best before date (generally within 5-7 days of harvest date)
